The Estate Distilling Movement

Hillrock Estate Distillery, the return of American estate whiskey, and why knowing where your grains com from may be the next big conversation in whiskey.

There is a question whiskey drinkers rarely ask.

We know who distilled our whiskey. We know the mash bill. We debate barrel char, warehouse location, proof, age statements and whether a bottle was finished in port, sherry or some obscure wine cask.


Set among the rolling hills and working farmland of New York's Hudson Valley, near the small farming community of Ancram, Hillrock Estate Distillery does not immediately feel like the stereotypical American whiskey operation. The setting is pastoral rather than industrial: open fields, old farm buildings and a landscape that makes it clear agriculture came first.


Those fields are not scenery for the tasting room. They are part of the distillery. The corn matters. The rye matters. The barley matters. And increasingly, the particular field and growing season matter too. That is the idea behind Estate Whiskey.

Whiskey With an Address

Estate whiskey borrows an idea wine drinkers have understood for generations: the place where the raw ingredients are grown can be part of the identity of what eventually ends up in your glass.

The Estate Whiskey Alliance has put formal standards around that idea. For a whiskey to carry the Estate Whiskey Certified mark, production including milling, cooking, fermentation, distillation, barreling, aging and bottling must occur on the estate, and at least 67 percent of the grain in the mash bill must be grown on land owned or controlled by the distillery. The certification can also identify the percentage of estate-grown grain.

For Hillrock's certified Double Cask Bourbon, Double Cask Rye and Single Malt, that number is 100 percent. Every grain in those certified expressions comes from estate-controlled land. 'Field to glass' becomes a literal description rather than a slogan.


The Farmer Behind The Distillery

Hillrock's owner and managing partner, Jeffrey Baker, has an unusual resume for someone who eventually built one of America's most agriculturally focused distilleries. Baker grew up in western New York and worked on farms when he was young. His professional career eventually took him into real-estate investment banking, with graduate study in business, architecture and city planning. Farming, however, never completely left the picture.

Baker purchased the Ancram property in 1999. The more he learned about the Hudson Valley, the more intriguing the idea became. Today American whiskey is associated most strongly with Kentucky and Tennessee, but New York once had a deep grain-growing and farm-distilling tradition.

Baker began growing small grains around 2010. Hillrock was founded in 2011, and the late Dave Pickerell - the influential former Maker's Mark master distiller - helped Baker develop the distilling program. Hillrock released its first estate-grown whiskeys in 2012.

The goal was never simply to build another small distillery. It was to reconnect the distillery to the farm. Nowhere is that philosophy more visible than inside Hillrock's malt house.

The Old-Fashioned Art of Floor Malting

Walk into most modern whiskey operations and you probably will not see anyone shoveling barley across a floor. At Hillrock, you can. Floor malting is one of those old processes that sounds simple until you watch what is actually happening.

After harvest, barley destined for malt is cleaned and steeped in water so the kernels absorb moisture and begin germination. The grain is then spread across Hillrock's malting floor. As it germinates, it produces heat and tiny rootlets begin emerging. Left alone, the bed can heat unevenly and the roots can knit the grain together.

So the maltster works it: rake, turn, shovel, spread, check the temperature - then do it again. The circular patterns visible across Hillrock's floor are evidence of that hands-on process. Turning the barley helps manage temperature, moisture and airflow while keeping germination relatively even.

During this period the kernel changes internally. Enzymes develop that will later help break starch into fermentable sugars during mashing. Maltsters refer to this development as modification. When the grain reaches the desired point, germination must be stopped, and the malt is dried in the kiln.

Hillrock has also experimented with smoke, including peat and local woods, as another way to influence the malt's character. By the time the barley reaches the mash tun it already has a biography: where it grew, the season it experienced, how it germinated and how it was dried.


Terroir Comes to Whiskey

Spend enough time around wine and somebody eventually uses the word terroir. At its simplest, terroir describes the interaction between an agricultural product and its place: soil, rainfall, temperature, elevation, growing season, plant variety and farming practices.

Whiskey has traditionally paid less attention to this because barrels understandably get so much of the glory. But before there is a barrel, there is grain. And before there is grain, there is a field.

This is where an estate operation becomes especially interesting. With control over its agriculture, a distillery can preserve information that is often lost when grain enters a large commodity stream. A field can be followed through multiple seasons: which grain variety was planted, planting and harvest dates, rainfall, heat, drought conditions and harvest volume. Those records can then be compared with grain composition, malting performance, fermentation, new-make spirit and eventually mature whiskey.

A wet, cool season may produce a crop differently from a hot, dry one. Kernel size, protein, starch and yield can change before the grain ever reaches the mill. That does not mean a drinker can taste a rainy June in a glass of six-year-old whiskey. Fermentation, distillation and years of interaction with oak complicate the picture enormously. But traceability makes the question testable.

The Estate Whiskey Alliance has identified terroir research as an important part of the category's future. The premise is compelling: if you preserve the identity of the field and the season, researchers and distillers can begin studying how agriculture changes the raw material entering the mash bill.

A Vintage Mindset for Whiskey

Imagine two rye harvests from the same estate. One follows a cool season with steady rainfall and a strong yield. The next comes after a hotter, drier summer and produces a smaller crop. The grain itself may arrive at the distillery with measurable differences.

An estate producer can keep those harvests identifiable rather than blending their origins into an anonymous grain supply. Hillrock has even explored single-field whiskey, taking the idea one step further: not merely New York rye, or Hudson Valley rye, but rye from that field and that harvest.

That does not mean American whiskey is about to adopt wine-style vintage charts. Barrel maturation remains a dominant force, and the science of whiskey terroir is still developing. But estate production gives the industry something it has often lacked: a documented agricultural starting point.


Hillrock and the Estate Whiskey Alliance

When the Estate Whiskey Alliance emerged through the University of Kentucky, Hillrock was a natural participant. Baker had already spent years advocating for the idea that the word 'estate' ought to mean something specific in whiskey, much as it does in wine.

Hillrock became one of the Alliance's founding members. The organization gives producers and consumers a common standard and helps distinguish genuine estate production from a term that, without a definition, could otherwise become little more than attractive marketing language.

The Alliance's published certified-product directory currently includes U.S. certified products from Hillrock Estate Distillery in New York, Maker's Mark in Kentucky and Whiskey Acres Distilling Co. in Illinois. Black Fox Farm and Distillery in Saskatchewan, Canada, is also represented.

Hillrock's certified Double Cask Bourbon, Double Cask Rye and Single Malt are each listed at 100 percent estate-grown grain. The bourbon uses estate corn and rye; the rye is made from estate rye; and the single malt is made from estate barley that is malted on the property.

Why Hillrock Feels Different

There are larger distilleries. There are distilleries producing far more whiskey. And there are certainly easier ways to make it.

That is partly what makes Hillrock interesting. Standing among the rolling agricultural hills of the Hudson Valley, the relationship between farm and distillery is difficult to ignore. Look one direction and you see the landscape where the grain grows. Walk inside and you find the malt house. A little farther along are the copper stills. Then come the barrels. Eventually you reach the tasting glass.

It makes whiskey feel less like a manufactured product and more like the conclusion of a long agricultural process.


Estate whiskey does not replace everything enthusiasts already love discussing. Age matters. Oak matters. Fermentation matters. The still matters. The skill of the distiller absolutely matters. Estate whiskey simply adds another person to the conversation - the farmer.


For a long time, that person has largely disappeared from the whiskey story. Hillrock is helping bring the farmer.
